Tutti frutti cake recipe is super soft, spongy and fragrant cake that is quick and easy to make in your kitchen for kids or even for an evening tea snack. With Christmas and New year coming, cakes are such a big hit. A vegetarian version of a classic favourite – tutti frutti cake,  made with candied fruits  is a perfect after school snack!

Ingredients

  • All purpose flour - 1 cup
  • Powder sugar - 1/2 cup
  • Milk - 1 cup
  • Baking powder - 1/2 teaspoon
  • Baking soda - 1/2 teaspoon
  • Vinegar - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Tutti frutti - 1/4 cup
  • Yellow food colour - 1/4 teaspoon
  • Ghee - 3 tablespoons
  • Salt - As required to preheat the cooker

Instructions

  1. In a bowl, sieve all-purpose flour, powder sugar, baking powder and baking soda.
  2. Add vanilla extract, ghee, vinegar and mix it well. Add milk to make it a semi thick batter.
  3. In a cooker, add salt on the base and preheat it on medium flame for 15 minutes.
  4. Grease the cake tin with ghee and sprinkle all purpose flour. Pour the batter in the center, sprinkle tutti frutti and tap it.
  5. Place the cake tin in cooker and bake it for 40 minutes on low flame. After 40 minutes turn off the flame and keep it aside to cool.
  6. Demould the cake.
  7. Tutti frutti cake in pressure cooker is ready to be served.
