Ingredients
- Basmati Rice - 1 Cup (washed and soaked in water for about 10 minutes)
- Chopped Potatoes - 2
- Chopped Beans - 1/2 cup
- Chopped Capsicum - 1/2 cup
- Chopped Onions - 2 (thin and long sliced, 1 for making barista and 1 for making biryani)
- Chopped Cauliflower - 1/2 cup
- Curd - 1 Cup
- Kesar strands - 4-5 (dipped in 2 tbsp water)
- Turmeric Powder - 1/2 tbsp (1/4th tbsp for frying vegetables and 1/4th tbsp for mixing in curd)
- Red Chili Powder - 1/2 tbsp (1/4th tbsp for frying vegetables and 1/4th tbsp for mixing in curd)
- Biryani Masala Powder - 1 tbsp
- Coriander Powder - 1/2 tbsp (1/4th tbsp for frying vegetables and 1/4th tbsp for mixing in curd)
- Saunf/ Funnel seeds - 1 tbsp
- Bay leaves - 2
- Kashmiri dry red chilies - 2
- Ginger garlic paste - 1 tbsp
- Cinnamon stick - 1
- Cloves - 2
- Cardamoms - 2
- Oil - 5 tbsp (2 tbsp for frying vegetables and onions, remaining 3 tbsp for making biryani)
- Fresh Mint leaves - 1/4th cup
- Chopped Coriander leaves - 1/4th cup
- Salt to taste
Instructions
- Heat 1 tablespoon of oil in a pan and add all chopped vegetables (beans, capsicum, cauliflower, potatoes) in it. Now add 1/4th tablespoon of turmeric, red chili and coriander powder. Saute the vegetables uncovered for around 5 minutes on medium flame. Set it aside.
- Heat 1 tablespoon oil in the same pan and add half of chopped onion and saute them for 5 minutes till they become translucent. These fried onions are called "Barista" for biryani.
- Take curd in a bowl and add saunf, ginger garlic paste and remaining 1/4th tablespoon of dry spices to it (turmeric, red chili, coriander powder) and 1 tablespoon of biryani masala powder. Mix it well and set aside.
- Heat 3 tablespoons oil in pressure cooker and add bay leaves, kashmiri dry red chilies, cinnamon, cloves, cardamom and half of chopped onions (non fried) to it. Saute this mixture for a minute.
- Now make a layer of fried vegetables on it.
- Now spread the prepared mixture of curd on it.
- Add soaked rice and saffron water to the cooker now.
- Spread fried onions (barista) on it and place some mint leaves and chopped coriander leaves on it.
- Add 1.5 cup of water to the cooker and close the lid. Pressure cook the biryani for 2 whistles.
- 'Veg Biryani in Pressure Cooker' is ready to be served now. Enjoy it with raita/ chatney.
