Malai Kofta Without Malai – Tasty & Healthy
Ingredients
- Paneer/Cottage Cheese - 200 gms
- Boiled potatoes/Aloo - 2-3 medium size
- Corn Flour or Maida - 2 tablespoon
- Chopped Tomato - 2
- Chopped Onion - 1 small
- Green Chilies - 1 to 2
- Ginger (chopped pieces) - 1 inch long
- Coriander leaves chopped - for garnish
- Coriander powder - 1/2 teaspoon
- Red Chili Powder - 1 teaspoon
- Turmeric/ Haldi - 1/4 teaspoon
- Garam Masala - 1 pinch
- Cumin/Jeera - 1/4 teaspoon
- Bay leaf/Tej Patta- 1
- Cinnamon stick - 1/2 inch long piece
- Black pepper corns - 2-3
- Badi elaichi/ Black Cardamom - 1
- Oil - 1 tablespoon
- Milk - 1/2 cup (optional)
- Fresh Cream/ Malai - 1/2 cup (if using)
- Garlic - 4 medium sized (optional)
- Water - 1 cup for gravy + 1 cup (adjustable) for making batter
- Salt - per taste
Instructions
- Take corn/maida and make a thick batter by adding little water to it.
- Take the boiled potatoes, paneer, salt, pinch of red chilli powder and mash it well. Make small balls. Dip these balls in maida/corn batter and deep fry in oil.
- Alternatively use appe pan to shallow fry these balls with lesser oil. I used the appe pan to fry.
- When done, transfer these kofta balls to a plate.
- GRAVY PREPARATION - Take chopped tomatoes, onion, garlic (if using), ginger and green chilies and fry in a frying pan for 2-3 mins. Once it cools down, grind the masala well or grind all these directly to a coarse paste.
- Take a pan. Add little oil and add the jeera and saboot garam masala (bay leaf, cinnamon stick, black pepper corn and badi elaichi)to it. Stir fry for a minute.
- Next add the tomato onion puree to it and stir fry. Cook for 4-5 mins on low flame. Add salt, coriander, turmeric, garam masala powder and red chili powder to it. Cook for 2-3 mins more till the oil separates.
- Add a cup of water and milk to adjust gravy consistency and cook for 4-5 mins more.
- At this stage one can add the cream and cook for another 5 mins. (I omitted this step). Once gravy becomes thick, it is ready.
- Add the kofta and close the lid.
- Garnish the koftas while serving with the coriander leaves and one can also add little cream for decoration. (Cream part omitted)
- Note - I prefer to add koftas just before serving so that they dont loose their shape.
