Litti Chokha is a flavoursome traditional dish of Bihar and Jharkhand.

Litti chokha is a delicious wholesome meal preparation, mostly made in the states of Bihar and Jharkhand. Litti is outwardly similar to bati, but the difference is a filling of roasted gram flour inside litti. It is served with chokha which is baigan bharta, and aloo chutney. Traditionally litti is baked over coal and cow-dung fire. In this recipe of litti chokha, we have altered the cooking in a cooker.

Ingredients

  • Wheat flour - 4 cups
  • Oil - 1/2 cup
  • Carom seeds - 1 teaspoon
  • Baking soda - 1 teaspoon
  • Roasted gram flour / sattu - 2 cups
  • Onion - 1/4 cup (finely chopped)
  • Lemon juice - 4 teaspoons
  • Coriander leaves - 1/2 cup (finely chopped)
  • Ginger - 1 inch (finely chopped)
  • Garlic - 1 teaspoon (finely chopped)
  • Red chilli powder - 1 teaspoon
  • Salt - salt to taste
  • Mustard oil - 3 teaspoons
  • Brinjal/ baigan - 1 piece (round shape)
  • Tomato - 1 piece
  • Potato - 1 cup (boiled and mashed)
  • Green chilli - 1 piece (finely chopped)
  • Mango pickle masala - 1 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Hot water - 1/4 cup
  • Ghee - 1/2 cup
  • Water - as required

Instructions

  1. Take a bowl, add wheat flour, 1/2 teaspoon carom seeds, salt, oil, baking soda mix it well. Then add water to make a soft dough and keep it aside for 20 minutes.
  2. Take another bowl, add gram flour. Then add onion, 1/2 teaspoon ginger garlic, red chilli powder, salt, 2 teaspoons lemon juice, 1 teaspoon mustard oil, 2 teaspoons water and mix it well.
  3. Knead the dough once again, then make round balls from the dough. Put sattu mixture in center of the ball and bind it to make litti.
  4. Take a cooker, dry roast the litti on cooker base for 5 minutes. Then stir the pressure cooker for a minute and again dry roast it for 9 minutes.
  5. When litti is cooked, dip it into desi ghee. Litti is ready to be served.
  6. For making chokha, bake brinjal and tomato. Then mash it.
  7. Add 2 teaspoons mashed potato, 1 teaspoon mustard oil, coriander leaves, salt, 1/2 teaspoon green chilli and mix it well. Chokha is ready to be served.
  8. For aloo chutney, take a bowl, add mashed potato then add red chilli powder, turmeric powder, ginger, garlic, mustard oil, salt, green chilli, mango pickle masala and lemon juice. Mix it well.
  9. Add hot water, mix well. Chutney is ready to be served.
  10. All three - litti, chokha and chutney, make a wholesome meal. Delicious litti chokha is ready to be served.
