Decided to prepare fried rice today and tried out recipe for Kashmiri Fried rice…It was liked by everyone in my family…Go ahead and try it out today….

Ingredients

  • Basmati Rice - 2 cups
  • Chopped mixed fruits 
  • Soya badi soaked and squeezed - 1/2 cup
  • Peas - 2 tablespoons
  • Chopped Onions - 2 small pieces
  • Garam masala - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Turmeric Powder - 1 teaspoon
  • Cream - 2 tablespoons
  • Milk - 4 cups
  • Sugar - 1 tablespoon
  • Ghee/ Butter - 2 tablespoons
  • Salt - as needed

Instructions

  1. Wash and soak the rice for at least 10 minutes and boil it in milk without adding water.
  2. Heat Ghee/ butter in a pan. Add cumin seeds and once it splutters add sugar and fry for a minute.
  3. Add onion and saute it for 2 minutes.
  4. Add salt, turmeric powder and garam masala powder and saute for 2 minutes.
  5. Add peas, soya and saute it. Add cream and rice and saute it.
  6. Garnish with mixed fruits and serve hot with raita.
  7. Enjoy tasty Kashmiri Fried Rice.
