Idli Dhokla – South Indian Cuisine!
Ingredients
- Besan/ gram flour - 1 cup
- Sooji/ semolina - 1 tablespoon
- Curd/ dahi - 1 cup
- Water/ pani - 2/3 cup
- Turmeric/ haldi - 1/4 teaspoon
- Lemon juice/ neebu ras - 1 tablespoon
- Sugar/ cheeni - 1 tablespoon
- Salt/ namak to taste
- Baking powder - 1/2 teaspoon
- Eno - 1/2 teaspoon
- FOR TADKA : Oil/ tel - 1 tablespoon
- Mustard Seeds/ raai- 1/2 teaspoon
- Chopped green chili/ hari mirch - 4
- Chopped coriander/ dhaniya patta -1 tablespoons
- Salt/ namak to taste
- Curry leaves/ meetha neem -10-12
- Lemon juice/ neebu ras - 1 teaspoon
- Sugar/ cheeni - 1 teaspoon
Instructions
- Mix all ingredients of dhokla and make smooth batter with water and rest for 5 minutes.
- Heat 2 cups of water in a heavy bottom pan and grease idili stand.
- Add baking powder and eno in besan and mix gently and pour batter in the greased idili stand.
- Put stand in boiling water and cover it while cooking for 12 minutes.
- Check the cooked dhokla by inserting a knife to it. The batter should not stick to the knife.
- Switch off the gas flame. Take the idili stand out of the pan and let it cool down for about 2 minutes.
- Tadka Preparation - Heat oil in a pan. Add mustard seeds, hing and fresh curry leaves to it.
- Once the seeds crackles, add chopped green chilies, water, sugar, lemon juice and salt according to the water. Boil for 2 minutes.
- Switch off the flame and wait for tadka to get cool down.
- Pour this tadka on dhokla and garnishes with chopped coriander.
- Delicious and healthy 'Idli Dhokla' is ready to be served with coconut chutney!!
