Ingredients

  • Coconut powder/ nariyal boora - 2 cups
  • Sugar/ cheeni - 1 cup
  • Milk/ doodh - 2 cups
  • Ghee - 2 tablespoons
  • Few strands of saffron
  • Crushed cardamom/ elaichi powder - 1 teaspoon
  • Pistachio pieces - 2 tablespoons

Instructions

  1. Take a nonstick saute pan and add coconut powder, sugar, milk and turn on the gas.
  2. Let the mixture boil. Add saffron and cardamom to the mixture and keep stirring.
  3. Keep stirring until all the liquid evaporates and the mixture starts leaving the sides of the pan.
  4. Then add ghee and stir it and turn off the gas. Take a plate and grease it with ghee.
  5. Pour the mixture into a plate and press evenly into a bowl. Garnish it with pistachio pieces.
  6. Keep the plate in the refrigerator to cool down and settle for 5 minutes. When it is set, cut it into pieces and enjoy.
  7. Yummy coconut barfi is ready for your celebration.
