Ingredients

  • Bhindi/ Okra - 200 gms
  • Onions/ pyaz - 1/2 bowl chopped
  • Green chilies/ hari mirch chopped - 1 tablespoon
  • Lemon juice/ neembu ras - 1 tablespoon
  • Oil/ tel - 2 tablespoons
  • Salt/ namak, red chili/ lal mirch powder and turmeric/ haldi powder - 1/2 teaspoon each
  • Coriander/ dhaniya powder - 2 tablespoons
  • Mango powder/ amchur powder - 1 teaspoon
  • Cumin seeds/ jeera - 1/2 teaspoon
  • Heeng - 1 pinch

Instructions

  1. Wash and cut the okra in round pieces and sprinkle lemon juice over it. Rest it for 5 minutes. This helps in making the curry non sticky.
  2. Heat oil in a pan. Add heeng and jeera to it. Saute and add chopped onions and green chilies to it. Saute till the onions turn pinkish in colour.
  3. Add chopped bhindi, salt, spices and mix well.
  4. Cook the curry for 10-15 minutes on medium flame.
  5. Once is done, add mango powder and then switch off the gas.
  6. Evergreen 'Bhindi Masala Curry' is ready to be served with hot roti/ rice!
