Spicy Idlis With Groundnut Chutney

Ingredients

FOR GROUNDNUT CHUTNEY
Peanuts - 1/2 cup
Salt - as per taste
Rai /Mustard seeds - 2 teaspoon
Hing - a pinch
Urad dal - 1 teaspoon
Oil - 5 tablespoons
Eno - 1 pouch
Whole red chillies - 2
Tamarind - marble sized ball
Garlic - few cloves
Idli Batter - 1/2 Kg
FOR ADDING IN IDLI BATTER : Onion - 1 Finely chopped
Garlic - few cloves
Tomato - 1 crushed
Green chilli - finely chopped
Hing - one pinch
Haldi - 1/4 teaspoon
Red chilli powder - 1/4 teaspoon
Fresh coriander - finely chopped
FOR SUJI IDLIS
Curd - 2 cups
Water - 1 cup

Instructions

In a pan, heat oil. Add rai, hing, chopped onions, garlic, green chillies and cook. Later add tomatoes ,coriander, haldi, red chilli powder and cook.
Mix the above cooked mixture to the idli batter. Whisk properly so that it gets evenly distributed and add salt. For suji idlis , add 2 cups curd and 1 cup water , mix all together and keep aside. (The batter should not be runny). Add the above cooked mix and salt.
Heat a tablespoon of oil and fry the peanuts till they change colour. Add in some garlic , ginger, whole red chillies and a tamarind ball of marble size.
Cool the above mixture and blend well in a mixie. Add some water (if required), salt and mix well.
Heat oil in a kadhai, add urad dal and rai. Add in the prepared chutney and water if you wish. Chutney is ready.
FOR IDLIS : Mix in the whole pouch of eno into the idli batter / suji batter and put in greased moulds.
Steam in a microwave for 6 mins.
Serve yummy idlis. Your can eat them with or without any chutney.
Spicy idlis with groundnut chutney is ready to be served hot !!
