I love to try making different varieties of dosa and one of them is Paper Dosa – South Indian Special. This dosa is famous for it’s extra thin texture and tastes delicious.

Ingredients

  • Rice/ chawal - 3 cups
  • Urad dal/ white lentils - 1 cup
  • Eno packet - 1
  • Salt/ namak to taste
  • Oil/ tel - 8 tablespoons

Instructions

  1. Wash rice and dal properly and soak them 7-8 hours in sufficient water.
  2. After soaking, drain water and grind it using fresh water to make a thick batter.
  3. Mix 1 packet eno in batter and leave it for overnight in warm place for fermenting.
  4. When batter doubles in size, mix salt.
  5. Heat a nonstick tava and spread 2 tablespoons batter on tava make thin dosa.
  6. Cook only one side using oil until crispy and golden in colour.
  7. Tasty and cruchy 'Paper Dosa' is ready to be served with coconut chutney!
