Ingredients

  • Cashew - 1 and 1/4 Cup
  • Sugar - less than 1/2 Cup
  • Water - 2 to 3 Tablespoon
  • Kesar/Saffron - few strands soaked in water
  • Pistachios - few
  • Almonds - few
  • Ghee/Clarified butter - for greasing

Instructions

  1. Grind cashew nuts using a grinder. Make a fine powder. Then sieve it. Keep aside.
  2. Now, take a pan. Heat it.
  3. Add sugar and water. Melt the sugar completely on a medium-low flame. Stir it continuously.
  4. Make one string consistency sugar syrup.
  5. Then add cashew powder to it. Mix well.
  6. Once the mixture leaves the pan then switch off the gas.
  7. Divide this mixture into two. Add saffron water to one mixture. Mix well. Let both the mixture cool.
  8. Now, take a modak mould. Grease it with ghee.
  9. Place the almonds and pista in each part of the modak mould.
  10. Fill the half part of modak with kesar mixture and the other with the white mix.
  11. Make modak out of it. Transfer to a plate.
  12. Yummy 'Kesar Kaju Modak' is ready to be served.
