Karela Bhurji | 5 Minute Recipe is a delicious and crunchy sabzi of Bitter Gourd.

Karela Bhurji | 5 Minute Recipe is nothing but bitter gourd sabzi made with Bitter Gourd, onion and spiced with red chilli powder and dry mango powder. It is a crunchy and tasty sabzi served with paratha or roti or Dal-rice. It gets ready in 10 minutes and requires very few ingredients which are easily available in the kitchen. Bitter Gourd or Karela is full of Vitamins, minerals, iron. It is good for Diabetics too.  So, try this recipe once and you will love the karela.

Ingredients

  • Karela/Bitter Gourd - 200 Gram
  • Onion - 2 big sized finely chopped
  • Jeera/Cumin seeds - 1/2 Teaspoon
  • Amchur powder/Dry mango powder - 1 Teaspoon
  • Salt - as per taste
  • Heeng/Asafoetida - a pinch
  • Red chilli powder - 1/2 Teaspoon
  • Oil - 3 to 4 Tablespoon
  • Chopped coriander leaves - a handful

Instructions

  1. Wash and peel the karele. Make a slit and remove all the seeds.
  2. Apply salt to the karele (inside and outside). Keep aside for 10 minutes.
  3. After 10 minutes, wash the karele. Then finely chop it.
  4. Heat oil in a pan. Add asafoetida and cumin seeds. Saute it.
  5. Add chopped karele to it. Saute it and cook on a high flame while stirring it. Cooking on a high flame removes the bitterness of karela and make it crunchy.
  6. When the karele turns brownish and bitterness is gone then add finely chopped onion. Saute it for 2 to 3 minutes on high flame to keep the onion crunchy.
  7. Add little salt, red chilli powder to it. Mix well and cook on a high flame. Do not overcook it, keep the onion crunchy.
  8. Then add chopped coriander leaves and dry mango powder. Mix well and cook for a minute. Switch off the gas.
  9. Yummy 'Karela Bhurji' is ready to be served with chapati/paratha.
