Ingredients

  • FOR CREPES - Wheat flour( gehun ka atta) - 1/2 cup
  • Jowar flour and besan - 1/4 cup each
  • Salt to taste
  • Oil - 1 tablespoon
  • Water - 3/4 to 1 cup as required
  • Stir fried vegetables - zucchini(cut into cubes) - 1/2 medium sized
  • Broccoli(cut into thin florets) - 1-2 cups
  • Green capsicum/shimlamirch(cut into juliennes) - 1/2 medium sized
  • Onion/Pyaz(Chopped) - 1 medium sized
  • Baby corn(sliced and chopped) - 3 medium sized
  • Olive oil - 1 and 1/2 tablespoons
  • Salt to taste
  • Pepper powder - 1/4 teaspoon
  • Chilli flakes - 1/4 teaspoon (Optional)
  • FOR PESTO SAUCE :
  • Basil - 1/2 cup
  • Olive oil - 1 tablespoon
  • Cheese(grated) - 1/2 cube
  • Garlic(chopped) - 3 cloves
  • Salt to taste
  • Pepper powder - 1/4 teaspoon
  • Lemon juice -1/2 teaspoon
  • Tomato ketchup for serving
  • Oil for roasting crepes - 1/4 cup

Instructions

  1. Add all the ingredients for making crepes in a bowl and make batter with falling consistency using water.
  2. In a pan, heat olive oil and add all vegetables. Stir fry for 5 minutes.
  3. Grind all the ingredients for pesto sauce in a mixer. Keep it aside.
  4. Keep the batter for 10 minutes.
  5. Spread some batter on non-stick tawa to make crepes. Spread 1/2 teaspoon of oil.
  6. Roast the crepes from both sides.
  7. Assembling:
  8. Spread 1 teaspoon pesto sauce and 1 teaspoon stir fried vegetables on the roasted crepe and fold it.
  9. Garnish crepe with stir fried vegetables in pesto sauce with tomato ketchup and serve.
