Ingredients

INGREDIENTS For Sponge - Refined flour - 100 gms
Unsweetened cocoa powder - 50 gms
Thick curd - 1 and 1/2 cups
Soft butter at room temperature - 100 gms
Baking powder - 1 teaspoon
Baking soda - 1/2 teaspoon
Granulated sugar - 100 gms
INGREDIENTS For Frosting - whipping cream - 1 cup
Semi or dark chocolate - 100 gms
Icing sugar - 100 gms
Piping nozzle - 1 no.
Piping bag - 1 no.
Ice cold water in a big bowl

Instructions

METHOD for the sponge - Whisk butter and sugar with a hand blender till it becomes fluffy.
Add curd and beat again for 2 minutes. Set aside.
Sift the flour, cocoa powder, baking powder and baking soda 2 times.
Add this mix to butter, curd mix and fold gently.
Pour the batter into muffin moulds.
Bake them for 20 minutes at 180℃ in a preheated oven.
Bring them to room temperature and refrigerate them for 10 minutes.
METHOD For Frosting - Heat cream and add chopped chocolate to it.
Mix it well until chocolate melts completely. Chill it in the freezer for 20 minutes.
Keep this bowl in ice cold water bowl and whisk with an electric blender.
Add sugar at small intervals and keep whisking until stiff peaks are formed.
Fill this cream into a piping bag with a nozzle and make swirls.
Yummy chocolate cupcakes are ready to be served.
