Zucchini Curry – Healthy Recipe!
Ingredients
- Zucchini/ turai - 1 medium sized
- Boondi - 1 cup
- Green chilli paste - 1 tablespoon
- Ginger paste - 1 tablespoon
- Turmeric powder - 1 tablespoon
- Red chilli powder - 1 tablespoon
- Coriander powder - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Mustard seeds - 1 tablespoon
- Cumin seeds - 1 tablespoon
- Pinch of Hing
- Salt to taste
- Water - 2 cups
- Coriander leaves - 1 tablespoon
- Lemon juice - 1 tablespoon
Instructions
- Chop Zucchini into small cubes.
- Heat a pan on stove and add oil to it.
- When oil warms up, add mustard seeds and let it crackle.
- Add cumin seeds, hing, green chilli paste and ginger paste.
- Add turmeric powder, red chilli powder and zucchini to the pan.
- Saute zucchini a little bit and add salt and water.
- Bring it to boil and simmer for 10 minutes till zucchini is tender.
- Add boondi and coriander powder and let it simmer for 1 minute.
- Transfer to the serving dish, garnish with coriander leaves and add lemon juice.
- Delicious Zucchini curry is ready now.
