Vegetable Oats Khichdi

Ingredients

Oats - 1 Cup
Chopped onion - 1
Chopped potato - 2
Chopped capsicum - 1/2 Cup
Chopped coriander leaves as required
Chopped tomato - 1
Chopped green chilli - 2
Curry leaves - 10 to 12
Cumin seeds - 1/2 Teaspoon
Mustard seeds - 1/2 Teaspoon
Turmeric powder - 1/4 Teaspoon
Red chilli powder - 1/2 Teaspoon
Coriander powder - 1/2 Teaspoon
Garam masala/All spice mix - 1/4 Teaspoon
Water - 2.5 to 3 Cups
Salt as per taste
Cooking oil - 2 Tablespoon
Lemon juice - as per taste

Instructions

Heat some oil in a pan on medium flame and add mustard and cumin seeds to it.
Add all chopped veggies except tomatoes and cook them for 5 minutes.
Add tomatoes and cook them for a minute.
Add spices, salt and then mix it well. Saute it for a while.
Add water and stir well. Add oats and cook on a low flame for about 5 minutes.
Add coriander leaves and turn off the flame.
Healthy 'Vegetable Oats Khichdi' is ready. Pour some fresh lemon juice over it while serving.
