Vegetable Oats Khichdi – Yummy Breakfast

I just had a young mom ask me if there is a healthy breakfast option that she can cook for her kids and family. I said,yes there are many🙂.

One of them which is very popular amongst kids today is vegetable oats khichdi which is healthy, nutritious and yummy. So here is the recipe for everyone including the mom who asked me the question🙂

Ingredients

  • Oats: 1 cup
  • Green Peas: 1/2 cup
  • Tomatoes: 2
  • Capsicum: 1
  • Cabbage: 1 cup
  • Chopped Spinach: 10-12 leaves
  • Green Chillies: 2
  • Ginger: 1 piece
  • Coriander Leaves
  • Olive oil : 1 tablespoon
  • Water: 2 glasses
  • For tempering : Mustard Seeds, Asafoetida
  • Salt as per taste
  • Turmeric Powder - A pinch

Instructions

  1. Chop the vegetables, green chilies and ginger .
  2. Heat oil in a pressure cooker, add mustard seeds and asafoetida to it.
  3. To it, add all the chopped vegetables, green peas, green chilies and ginger and saute for 2-3 minutes.
  4. Add salt and turmeric to it and mix them well.
  5. Add oats to this mixture and then add water.
  6. Close the lid and cook it on high flame .Turn off the gas after a whistle and allow it to cool down.
  7. Once cooled down open the lid and garnish the khichdi with coriander leaves.
  8. Enjoy tasty Vegetable Oats Khichdi.
