Vegetable Fried Idli or Idli poha is a yummy option for leftover idlis and can be made instantly. Try this simple recipe below and enjoy a nice spicy evening or morning snack with your family!

Ingredients

  • Leftover Idlis - 4 pieces
  • Chopped Vegetables ( Capsicum, Cabbage, Green Chili , Tomatoes ) 1/2 piece each
  • Peas or Matar - 10 piece
  • Curry Leaves
  • Turmeric - 1/2 teaspoon
  • Red chili powder-1/2 teaspoon
  • Salt as per taste
  • Vegetable Oil - 1 tablespoon
  • Mustard seeds - 1/4 tablespoon

Instructions

  1. Take leftover Idlis. Cut them into long rectangular pieces.
  2. Heat oil in a non stick pan. Add mustard seeds and curry leaves. Once the seeds crackle, add all the chopped vegetables except tomatoes. Mix well
  3. Add turmeric powder, red chili powder and salt. Mix well. Cover it with a lid and let it cook till vegetables are half boiled or soft.
  4. Add tomatoes and cover it again . Let it cook for 5 minutes.
  5. Now add the cut idlis and saute for 2 minutes. Mix well.
  6. Spicy or Chatpati Idli Poha is ready to be served.
