Stuffed(Bharwan) Parwal & Potatoes

Ingredients

Parwal - 10 pieces
Chopped potatoes - 2 (Cut it into shape of circle)
Red chili powder - 1/2 tablespoon
Coriander powder - 1/2 tablespoon
Garam masala powder - 1/2 tablespoon
Dry mango powder/ amchur - 1/2 tablespoon
Cumin powder - 1/2 tablespoon
Turmeric powder - 1/2 tablespoon
Chopped green chilies - 1
Chopped onions - 1 (optional)
Crushed garlic - 3-4 cloves
Crushed ginger - 1/2 inch
Hing (Asafoetida) - less than 1/4th tablespoon
Saunf(Fennel seeds) - 1/2 tablespoon
Salt to taste
Oil - 3 tablespoon to make stuffing and rest as required for shallow frying

Instructions

Wash parwal thoroughly and then remove the stalk from both the ends of the parwal and peel off their skin.
Slit the parwal and scoop out the seeds from it.
Heat oil in a pan and add hing, chopped onions (optional), chopped green chilies, crushed ginger and garlic. Saute this for 30 seconds.
Add all dry masalas (turmeric, red chilli, amchur, coriander, garam masala, cumin),saunf and salt . Cook them for a minute on medium flame. Allow this to cool down for 5 minutes.Stuffing mixture is ready.
Stuff this mixture into parwal.
Heat oil in the same pan.Add parwals and potatoes and cook them on medium flame.
After 5-8 minutes, check the veggies and flip them over.
Shallow fry the parwals and potatoes from both the sides.
"Stuffed (Bharwan) Parwal" curry is ready to be served with hot chapatis/poori/rice dal. You may store this curry for next 2 days in refrigerator.
