Stuffed Pancakes – Yummy Breakfast
Ingredients
- FOR PANCAKES: maida/ all purpose flour - 1 cup
- Curd/dahi - 1/2 cup
- Water - 2/3 cup
- Salt to taste
- FOR STUFFING: Boiled potatoes - 2
- Onion (chopped) - 1/2 cup
- Ginger garlic paste - 1/2 teaspoon
- Rai/ mustard seeds - 1 teaspoon
- Oil - 1 tablespoon
- Red chilli powder - 1/2 teaspoon
- Amchoor/dry mango powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt to taste
- Chopped coriander - 1 tablespoons
- Eno - 1/2 teaspoon
- Baking powder - 1/2 teaspoon
- Butter - 2 tablespoons
Instructions
- Mix together maida, curd, salt, eno, baking powder and water. Make a lump free batter.
- Heat oil in a pan. Add rai to the oil. When rai starts to crackle, add ginger garlic paste. When ginger garlic paste becomes light brown, add mashed potatoes and all spices to it.
- Saute for 2-3 minutes. Add chopped coriander. Let it cool. Make flat balls of it.
- Put a nonstick pan on gas. When the pan is heated, put some butter. Spread 2 tablespoons of pancake batter. Put the stuffing flat ball and spread another 2 tablespoons of pancake batter on it. Shallow fry both side till golden brown.
- Delicious Stuffed pancakes are ready to be served with chutney or tomato sauce.
