Ingredients

INGREDIENTS FOR CHEESE CAKE :
Hung curd - 1 cup
Digestive biscuits - 20 numbers
Powdered sugar - 1 cup
Strawberries ( sliced ) - 200 grams and a few strawberries for topping
Melted butter - 5 tablespoon
Cornstarch - 2 tablespoon
Aluminum foil sheets - 2
1 spring form cake mould
Home made cream cheese - 2 cups
INGREDIENTS FOR CREAM CHEESE:
Lemon juice - 4 tablespoon
Whole fat Milk - 2 liters
Ingredients for Strawberry reduction -
Strawberries - 6-7 numbers
Water - 1/2 cup
Sugar - 1/4 cup

Instructions

METHOD FOR CREAM CHEESE - Add milk to a heavy bottom pan.
When milk is about to boil and bubbles are formed on the side of the pan, add lemon juice slowly.
Keep steering the milk, it will start curdling. Switch off the gas immediately .
Cover the pan with lid and keep at rest. When it curdles, strain with the help of a muslin cloth.
Let it cool completely, then blend to fine creamy paste and refrigerate it. Cream cheese is ready to be used in the cheese cake.
METHOD FOR CHEESE CAKE- Cover the spring form mould with foil sheets so that water does not enter into the mould.
Crush the biscuits and add melted butter to make a butter-biscuit mix.
In a blender add cream cheese, hung curd, corn flour or cornstarch and powdered sugar and make a creamy paste.
Set the biscuit mix at the bottom of the mould as a base. Press it with a spatula.
Line the sides of pan with sliced strawberries.
Now fill the pan with cream cheese mix and keep the mould into a baking pan.
Fill the baking pan with hot water upto half of its length and keep the cake mould in that hot water filled baking pan. Place this pan in the preheated oven and bake at 170℃ for 1 hour.
When baked, cool it completely. The cake will wobble a little but no worries and chill for at least a 5-6 hours to set completely.
Dip the strawberries into its reduction and top the cake.
METHOD for Strawberry reduction- In a pan add everything mentioned above and boil until the mix reduces to half.
Blend and strain to get it's reduction. Cool it and dip a few berries in this to top.
Creamy and yummy Strawberry Cheese Cake is ready to be served
