Strawberry and carrot cake is a simple, moist, yummy cake with chopped walnuts, cinnamon spice and a tangy creamy frosting.

Strawberry and carrot cake is a soft and fluffy cake made with fresh strawberries and carrots with some butter frosting in top along with the nuts giving a tangy nutty flavour.

Ingredients

  • CAKE : Wheat flour 3/4 cup
  • Maida - 3/4 cup
  • Powdered sugar - 1/2 cup
  • flax seeds - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Eno fruit salt - 1 sachet
  • Cinnamon powder - 1 teaspoon
  • Butter - 1/4 cup
  • Olive oil - 1/4 cup
  • Yogurt - 1/2 cup
  • Water - 1/2 to 3/4 cup
  • Strawberry chopped - 1 cup
  • Carrots grated - 1 cup
  • Almonds and walnuts - 2 tablespoon sliced
  • ICING - Malai (home) - 1/2 cup
  • Sugar - 2 tablespoon
  • Sugar powdered - 1 tablespoon
  • GARNISHING : strawberry and walnuts

Instructions

  1. Add butter and oil to a bowl and beat it with beater to make smooth paste. Add sugar, flax seeds and beat again for a minute. Add yogurt , beat for a minute. Add cinnamon powder. Mix well and keep it aside.
  2. Sieve wheat flour, maida, baking powder and eno in another bowl.
  3. Add the sieved dry ingredients to wet mixture and mix well with cut and fold method.
  4. Add carrots and strawberries to the cake batter and mix it well. To get falling consistency, you may add water.
  5. Line up paper cups in a tray and add one scoop of mixture to each cup.
  6. Bake in hot oven for 25 to 30 minutes.
  7. ICING : In a pan, add malai and sugar. Let it boil till it turns thick, which might take around 30 minutes.
  8. After the cakes are completely done, spread the icing on the hot cakes and garnish with strawberries and walnuts.
  9. Instead of icing you can sprinkle powdered sugar as well. Enjoy your strawberry and carrot Cake.
