Spinach Rice – Healthy Recipe
Ingredients
- Rice - 1 cup
- Spinach leaves puree - 1 cup
- Chopped onions, tomatoes and green chilli - 1 each
- Green peas - 1/4 cup
- Kashmiri dry red chili - 1
- Bay leaves - 1
- Oil - 2 tablespoon
- Spices - Mustard seeds, Turmeric, Red chili, Coriander and Garam masala powder - 1/2 tablespoon each
- Salt to taste
Instructions
- Wash the rice and collect them in a bowl. Puree the spinach leaves in a grinder.
- Heat oil in pressure cooker and add bay leaves, kashmiri red dry chilli and mustard seeds. Wait till the seed crackles.
- Add chopped onions, tomatoes, green peas, and green chilies to the cooker.
- Add spinach puree and all above spices.
- Add rice and mix well. Pour 2 cups of water and close the lid of the cooker.
- Cook the rice on medium flame till 2 whistles and switch off the flame then.
- Delicious and healthy "Spinach Rice" are ready to serve with raita.
