Ingredients

  • FOR DOUGH - All purpose flour/ maida - 2 cups
  • Carom seeds/ ajwain - 1 teaspoon
  • Salt - to taste
  • Ghee - 1/3 cup
  • STUFFING - Boiled potatoes/ aloo - 250 grams
  • Cumin seeds/ jeera - 1/2 teaspoon
  • Ghee - 2 tablespoons
  • Chopped mix dry fruits - 1/2 cup
  • Dry mango/ amchur powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Ginger chili/ adarak mirch paste - 1 teaspoon
  • Daal masala - 1 teaspoon
  • Salt - to taste
  • Ghee - for deep frying

Instructions

  1. Make a roti like dough by mixing all the ingredients as mentioned (for dough) above. Rest it covered for 30 minutes.
  2. Heat oil in a pan and add cumin seeds to it. When seeds crackles, add ginger chilli paste and saute for a minute.
  3. Add chopped dry fruits and saute for 1 minute.
  4. Add potatoes and remaining spices and salt. Saute for 15 to 20 minutes on low flame. Let the mixture to cool.
  5. Divide the dough into 30 equal parts and roll them like thin rotis/chapatis.
  6. Take a roti, put 1 teaspoon of stuffing at the center of the roti and cover another roti and fold the edges to make a design of chanderkala.
  7. Heat ghee in a pan and fry the chanderkala on low flame till they become golden and crispy.
  8. Shahi chanderkala is ready to be served.
