Sandwich Dhokla – Gujarati Cuisine
Ingredients
- FOR WHITE BASE - Semolina/ sooji/ rava - 1 cup
- Curd/ dahi - 1/2 cup
- Water/ pani - 1 cup
- Lemon juice/ neembu ka ras - 1 tablespoon
- Sugar/ cheeni - 1 tablespoon
- Salt/ namak to taste
- FOR YELLOW BASE -
- Besan/ chickpea flour - 1 cup
- Curd/ dahi - 1 cup
- Water/ pani - 1 cup
- Turmeric/ haldi powder - 1/4 teaspoon
- Lemon juice/ neembu ras - 1 tablespoon
- Sugar/ cheeni - 1 tablespoon
- Salt/ namak to taste
- FOR TADKA - Mustard seeds/ raai - 1 teaspoon
- Green chili/ hari mirch - 1
- Curry leaves/ meetha neem - a few
- Water - 3 cups for steaming dhokla
- Green chutney/ hari chutney - 1 tablespoon
- Tomato/ tamatar sauce - 1 tablespoon
- Eno - 1 pouch
- Baking powder - 1 teaspoon
Instructions
- Mix all the ingredients of the white base and make a smooth batter with water.
- Similarly, mix all ingredients of yellow base and make smooth batter with water.
- Add baking powder and eno in both the mixtures.
Mix gently. You may see that some bubbles have started coming up in the mixture.
- Boil 3 cups of water in a thick and wide pan.
- Grease dhokla maker stand with oil and pour both the batters into separate plates and keep them inside the stand.
- Steam the batter covered for around 12-15 minutes on a high flame.
- Check the cooked dhoklas by inserting a knife to it. The batter should not stick to the knife.
- Switch off the gas flame. Take the dhokla stand out of the pan and let it cool down for about 10 minutes.
- Cut both the dhoklas into small pieces in square shape.
- Heat oil in a pan. Add asafoetida, mustard seeds, green chilies and fresh curry leaves to it.
- Take yellow dhokla and spread green chutney over it. Keep white dhokla on yellow one and spread tomato sauce over it. Layer it again with yellow dhokla, thus making a sandwich.
- Pour the tadka on sandwich dhokla now.
- Delicious and yummy 'Sandwich Dhokla' is ready to be served!!
