Ingredients

  • Dried red chilli - 4
  • Curry leaves - 2 spring
  • Cumin seed - 1/4 Teaspoon
  • Coriander seed -1 Teaspoon
  • Oil - 1/4 Teaspoon
  • Split pigeon peas/toor dal - 1/4 Cup
  • Turmeric powder - 1/4 Teaspoon
  • Fresh grated coconut - 1 Cup
  • Urad dal/ split black gram without skin - 1/4 teaspoon
  • Sea salt - as per taste
  • Mustard seeds - 1/4 Teaspoon
  • Tamarind juice - 2 Tablespoon
  • Ghee/clarified butter - 1/2 Teaspoon
  • Potato - 1 cut into cubes
  • Onion - 1 cut into cubes
  • Carrot - 1 cut into cubes
  • Peas - 1/2 Cup
  • French Beans - 1/2 Cup cut into small pieces
  • Water - as required

Instructions

  1. Boil all vegetables in a pressure cooker for one whistle. Set aside. Also, cook toor dal in a pressure cooker. Cook the dal for one whistle on a high flame then lower the flame and cook for 3 whistles. Set aside.
  2. Take a pan, add oil and heat it. Add coriander seeds, cumin seeds and dried red chillies. Roast it for 2 minutes on a medium flame. When the colour of coriander seeds changes then switch off the flame.
  3. Take a mixer jar, add fresh grated coconut. Add roasted coriander seeds, cumin seeds and red chillies. Grind it in a smooth paste by adding little water. Keep aside.
  4. Take a pan, add all boiled vegetables and little water. Add sea salt, turmeric and tamarind juice. Boil it. Add the coconut paste to it. Check the consistency add water if required. Cook for a minute. Then add cooked dal to it. Boil it.
  5. Take a pan, add ghee and heat it. Add mustard seeds and urad dal. When it splutters, add curry leaves to it.
  6. Add this tadka to the boiling dal. Boil for a minute. Then switch off the gas.
  7. Yummy and tasty 'Sambhar - In UDUPI Style' is ready to be served with rice/idli/dosa.
