Saffron Rice

Ingredients

Rice (washed and soaked for 10 minutes ) - 1 cup
Water for boiling rice - 4-5 cups
Sugar - 3/4 cup or tastewise
Few saffron strands or half teaspoon saffron colour
Bay leaves - 3-4
Whole spices like green cardamom, black pepper, cloves, cinnamon sticks - 4-5 each
Mix dry fruits - a handful
Ghee - 2 tablespoons
Milk - 1/2 cup

Instructions

Boil rice with saffron or colour and all the whole spices and bay leaves.
When the rice is boiled 75%, strain them and keep aside. Also, keep the water.
Heat ghee in a pan and fry all the dry fruits. Take them out.
In the same ghee saute rice for 1 minute and add sugar, milk and half cup leftover saffron water.
Stir well and bring to one boil. Simmer the gas and cover with lid.
Cook for 3 minutes and switch off the gas. Keep it at rest.
Yummy saffron rice is ready. Garnish it with fried dry fruits.
