Kaachri Red Chillies chutney is a spicy, tangy, yummy chatakedaar chutney from interior rural regions of Rajasthan.

The tanginess of Kaachri and the spice of Chilies blends with each other to give fresh red chillies kaachari chutney a  yummilicious taste. Addition of garlic is icing on the cake.

Ingredients

  • Fresh Kaachri - 250 gms
  • Dried Red Chilies - 100 gms or less
  • Cumin Seeds- 1/2 tspn
  • Asafoetida powder
  • Salt as per taste
  • Oil/Ghee - 1 teaspoon

Instructions

  1. Peel and deseed the Kaachris. Cut into thin slices. Wash and soak dry chilies after cutting into pieces. If fresh chillies, no need to soak.
  2. In a blender add chilies, kaachri along with salt and little cumin seeds and grind it to a coarse paste.
  3. Heat ghee/oil. When hot, give tadka of asafoetida powder. Add the coarsely grind mirchi kaachri. Mix all.
  4. Cook for 4-5 mins on low flame. When the chutney consistency becomes thick enough, Off the flame. Let it cool.
  5. You may also add garlic/lehsun to this chutney.
  6. Note - Taste and check the kaachri seeds so that they are not bitter. You may use or discard the seeds depending upon your taste and liking. I discard most of them and keep only very smaller seeds.
  7. If one uses Silbatta to grind them, the taste becomes awesome. In such case you can add buttermilk instead of water to get a superb taste. Also it helps in lowering the spiciness of chillies adding its flavour.
  8. Ghee is preferred over oil to balance the acidic flavour of chillies and garlic and adding its own flavour.
