Left over Roti Khichdi

Ingredients

Left over Chapatis - 4 (Leave the leftover Chapaties to get dry for atleast 1day.Make sure not to cover the box in which the Chapati has been kept for drying as it may create fungus on it.Better is to cover it with a Sieve).
Chopped Onions - 2
Chopped Tomatoes - 1
Chopped Green Chilies - 1
Chopped Potatoes - 1
Coriander Powder - 1/2 tbsp
Turmeric Powder - 1/2 tbsp
Red Chili Powder - 1/2 tbsp
Oil - 2 tbsp
Mustard Seeds - 1/4th tbsp
Cumin Seeds - 1/4th tbsp
Fresh /Frozen Green Peas - 1/2 Cup
Fresh Curry Leaves
Chopped Coriander Leaves for Garnish
Salt to taste
Water - 1 Cup

Instructions

Heat Oil in a pan.Add Fresh Curry Leaves and Mustard seeds to it.
After few seconds,the Mustard seeds will start crackles.
Add Chopped Onions, Chopped Green Chilies, Green Peas and Chopped Potato to the pan. Cook the mixture,covered for about 5-7 minutes till the potatoes cooked well.
Add Turmeric, Coriander and Chili Powder to the pan and cook the Masalas for about 1 minute.
Now add the Chopped Tomatoes and cook the mixture for around 5 more minutes.
Once the Tomatoes are cooked,add Salt and add Leftover Chapati Small pieces to it.(Wash the leftover Chapaties in running water slightly as it becomes very hard after 1day of dryness)
Add Water and Cover and Cook the mixture for another 5-7 minutes till it gets Boiled.Set the consistency of Water in Khichdee as per your wish.
Switch off the flame now.Leftover Roti Khichdi is ready now .Garnish it with Chopped Fresh Coriander Leaves. Serve it Hot.
