Ingredients

  • Chopped Cauliflower Florets - 25
  • Chopped Beans - 20
  • Chopped Capsicum - 1/2 piece
  • Chopped Carrot - 2 pieces
  • Peeled Potato - 1 piece
  • Peas - 1/2 bowl ( optional)
  • Onion - 1 piece
  • Tomato - 1 big piece
  • Garlic - 2 cloves
  • Ginger - 1/2 inch
  • Green Chilli - 1 piece or as per taste
  • Spices - As per taste : Salt, Turmeric ( 1/2 teaspoon), Red Chilli, Pav Bhaji Masala ( 2 tablespoon) , Cumin Seeds ( 1 teaspoon)
  • Pav bhaji buns - 6 pieces
  • Lemon - 1 piece
  • Chopped Coriander Leaves and Onion - For garnishing
  • Vegetable Oil - 2 tablespoon

Instructions

  1. Boil all the vegetables above in pressure cooker except onion and tomatoes. Take 4-5 whistles on high flame.
  2. Take onion, garlic, ginger and green chili and make seperate paste out of it. You can grate them too as per your choice.
  3. Take tomato and grind it into a paste.
  4. Take a deep pan or kadhai and add oil to it. On heating, add cumin seeds to it. once they crackle, add onion paste to it and let it cook thoroughly till the oil is full absorbed.
  5. Now add tomato paste and let it also cook properly for 4-5minutes on slow flame. Add salt, 1 spoon pav bhaji masala and turmeric as per taste.
  6. Now mash all the boiled vegetables with a potato masher properly and add them to the deep pan.
  7. Now let it cookfor 5 minutes on slow flame. Add red chili and pav bhaji masala again
  8. Now switch off the gas after 2 minutes. Add lemon juice and garnish with onion and coriander leaves. Add a spoon of butter as per taste on top of it.
  9. Heat the buns from both the sides on a pan using ghee.
  10. Delicious Pav Bhaji is ready to be served hot.
