Pav Bhaji – Maharashtra’s Famous Street Food
Ingredients
- Carrots, cauliflower, capsicum, beans - 1/2 cup
- Green peas - 1/2 cup
- Potatoes - 2
- Ginger garlic paste - 1/2 teaspoon
- Spices - turmeric, red chili, cumin seeds - 1/2 tablespoon each
- Pav bhaji masala - 2 tablespoon
- Butter - 3 tablespoon for bhaji, 2 tablespoon for frying pav, remaining as required for serving
- Green coriander leaves for serving - a handful
- Onions, tomatoes and green chilies - chopped 1 each of big size
- Salt to taste
- Pav - 10-12
- Lemon juice as required for serving
Instructions
- Rinse and boil vegetables - carrots, potatoes, cauliflower and beans to one whistle in pressure cooker.
- Meanwhile chop the onions, chilies and tomatoes. Keep some onions aside for serving.
- Heat some butter in pan and add cumin seeds to it. Wait till it crackles.
- Add ginger garlic paste and saute for a while.
- Add chopped onions, saute them till they become translucent.
- Add chopped chilies, peas and tomatoes now. After a minute, add chopped capsicum.
- Cook for 2 minutes till the capsicum softens.
- Add salt and spices and mix well. Cook the spices for a minute.
- Meanwhile drain excess water from boiled vegetables and mash them with the help of a flat spoon. Don't make puree of vegetables.
- Add all mashed vegetables to the bhaji and mix well.
- Cook the bhaji for more 3 to 4 minutes. Switch off the flame once is done.
- Fry the pav in non stick tava by applying butter on one/ both sides.
- Serving - Take bhaji in a bowl and pour some butter and lemon juice over it. Sprinkle some chopped onions and coriander leaves on it. Place 2 pavs and serve hot.
- Delicious and healthy 'Pav Bhaji' is ready to serve. Enjoy with your family.
