Mixed Veg Stuffed Paratha
Ingredients
- Grated Cauliflower - 1/2 cup
- Grated Carrots - 1/4th cup
- Grated Spring Onion - 1/4th cup
- Chopped Onions - 1
- Chopped Green chilies - 2
- Turmeric powder - 1/2 tablespoon
- Red chili powder - 1/2 tablespoon
- Garam masala - 1/2 tablespoon
- Coriander powder - 1/2 tablespoon
- Amchur - 1/2 tablespoon
- Sauf - 1/2 tablespoon
- Ajwain - 1/2 tablespoon
- Ghee/ Oil as required for making Parathas
- Coriander leaves finely chopped - 1/4th cup
- Salt to taste
Instructions
- Take grated vegetables (carrots, cauliflower, spring onion) in a bowl and add finely chopped chilies, onions and salt to it and set it aside for 5-10 minutes.
- Check this mixture after 10 minutes. Onions and salt will start releasing water from it. Squeeze all water from the mixture with the help of a cotton cloth.
- Add all dry masalas (coriander, turmeric, red chilli, garam masala, amchur, ajwain, saunf) & chopped coriander leaves to the mixture. Mix it well.
- Stuffing for mix veg parathas is ready now.
- Make dough out of the wheat flour and medium sized balls, roll it and dust it with some flour on the rolling board.
- Roll it about 3 inches size and put 1 tablespoon of stuffing of mix veg on it.
- Bring all the edges together of the dough and press them to the center.
- Flatten the roll again and dust it with some more flour.
- Roll the paratha lightly from all sides and the center as well making a perfect circle of 5 inches diameter.
- Heat a non stick tawa and put the rolled paratha on it. Check when the bottom side of the paratha is half cooked, flip the side and apply some ghee/ oil to it with the help of a spoon.
- Flip the paratha again now so that the bottom side will be the one with ghee/ oil. Now apply ghee/ oil to the upper side as well.
- Flip it for 1 or 2 times so as to make sure paratha is cooked well.
- While cooking, you may press the paratha edges with the help of a flat spoon.
- Serve it hot with curd, chutney, or pickle.
