Matar Chaat

Ingredients

White peas (washed and soaked overnight) - 1 cup
Water for boiling peas - 4-5 cups
Finely chopped tomatoes - 2-3 medium sized
Finely chopped onions - 1 big
Chopped coriander - a bunch
Chopped green chillies - 1 tablespoon
Oil - 2 tablespoons
Salt, turmeric powder, roasted cumin powder, red chilly powder - 2 teaspoons each
Chat masala, black salt and garam masala powder - 1 teaspoon each
Coriander - mint chutney - 2 tablespoons
Tamarind sweet chutney - 1 tablespoon
Lemon juice of 1-2 lemons
Cumin seeds - 1 teaspoon
Ginger juliennes - for garnishing

Instructions

Start with boiling the white peas with water, salt and turmeric powder.
Make sure they are not over boiled or mushy.
Heat oil in a pan and add cumin seeds and let them crackle. Add all the powdered spices except chat masala, roasted cumin powder and black salt.
Add the boiled white peas to this tadka and mix everything together.
In a bowl combine tamarind sweet chutney and coriander - mint chutney. To this add black salt, chat masala and chopped green chilies.
Mix the above with cooked peas and combine everything together.
Finally, add lemon juice and mix well.
Top the chaat with chopped tomatoes, onions and ginger juliennes.
Lip smacking matar chaat is ready to be served.
