Shahi Paneer Mogar

Ingredients

Mogar/Yellow Moong Split Daal - 150 gms
Paneer - 100 gms
Curd/dahi - of 1/2 litres milk
Ghee - 80 gms
Magaj/kharbuje ke beej - 50 gms powdered
Green chilies - 30 gms - very finely chopped
Ginger - 30 gms -grated
White Black Pepper powder -1 tspn
Garam masala - 1 tspn
Khada masala - tejpatta, black pepper, daalchini, cloves, royal cumin seeds
Cumin Seeds- 1 tspn
Asafoetida - tspn
Red chili powder -1 1/2 tspn
Coriander powder -1 tspn
Tumrmeric powder 1/2 tspn
Dhania/coriander - finely chopped
Mint/Pudina - finely chopped

Instructions

Cut paneer into small size squares say abt 1/2 inch area and 3 to 4 mm thick.
Wash and soak Mogar for 2-3 hours. Then boil water, add soaked mogar and remove it after 10 mins.
Same way, put the paneer cubes in hot boiling water and remove after 5 mins from it. Keep aside.
Add salt, turmeric, red chili powder and corainder powder to curd. Mix it well and keep aside.
Now heat ghee in a heavy bottom pan/pateela. Add asafoetida and cumin seeds along with. saboot khada masala as tadka to it. Saute.
Add grated ginger and saute it. Then add ginely chopped green chilies and saute. Lower flame.
Add the masala added curd to this. Cook it and keep syirring in between frequently. When curd gets cooked, it starts leaving oil from sides.
Now add powdered magaj, white black pepper powder and garam masala powder to it. Mix well and cook. The curd gravy will get thickened and leaves an oil layer.
Now add water (preferably warm water) to the gravy to adjust consistency. It should not be thin, instead thick pouring consistency.
Add the mogar daal from the hot warm water draining water. Mix well. Add the paneer cubes to this. Mix and Cook on low flame for 10 to 15 mins.
Garnish with finely chopped mint and coriander leaves.
Paneer Mogar is ready to be served.
