Ingredients

INGREDIENTS FOR CUPCAKES - All purpose flour - 1 cup
Thick curd - 1 1/2 cups
Powdered sugar - 1 cup
Softened butter - 1/2 cup
Baking powder - 1 teaspoon and baking soda - 1/2 teaspoon
Orange juice - 2 tablespoons
Orange marmalade - 5-6 teaspoons
INGREDIENTS FOR FROSTING - Whipped cream - 1 cup
Icing sugar - 1 cup
Canned cherries - 1/2 tin (Crushed)

Instructions

For Sponge - Whisk butter and powdered sugar until fluffy.
Add curd and whisk well.
Sieve the all purpose flour with baking powder and baking soda 2 times.
Add sieved flour in small quantity, at a time and fold gently.
Add 2 tablespoons of orange juice and mix well.
Pour the batter, into the muffin moulds and bake at 180℃ for 20 minutes.
When baked, bring them out and let them reach the room temperature.
Refrigerate them for 10 minutes and prepare for frosting.
Method for frosting - Take chilled whipped cream and beat with an electric beater.
Add crushed canned cherries to cream.
Add icing sugar, half cup by half cup and beat until hard peaks are formed.
For stuffing the cupcakes - Make cavities with a sharp knife on the top of the cupcake.
Fill the cavity with orange marmalade and cover them with cupcake lids.
Fill the piping bag with the nozzle in and make swirls with whipping cream.
Decorate cupcakes with cherry and serve. Marmalade stuffed cupcakes are ready to be served.
