Kurkuri Bhindi/ Okra – Tasty Curry
Ingredients
- Bhindi/ladies finger cut into thin long slices - 200 gm
- Cold milk as required to soak bhindi strips
- Gram flour/ besan - 5 tablespoons
- Cornflour - 1 tablespoon
- Salt as per taste
- Chili powder as per taste
- Turmeric powder - 1/2 tablespoon
- Asafoetida/ hing - 1/4 tablespoon
- Dry mango powder/Amchur - 1/2 tablespoon (optional)
- Oil as required to deep fry okra
- Lemon juice for serving - 1/2 tablespoon
- chaat masala - 1/2 teaspoon
Instructions
- Soak the bhindi strips in cold milk for 4-5 mins.
- Meanwhile mix all the dry ingredients except oil in a flat plate.
- Remove the bhindi strips from the milk and squeeze out any milk from them. Pat them dry.
- Put the strips in the besan mixture and coat all strips with the spices evenly.
- Heat oil in a pan and deep fry the strips until crisp.
- Drain on a kitchen paper.
- Sprinkle chaat masala over them and pour some fresh lemon juice.
- Kurkuri Bhindi is ready to serve. Enjoy it in snacks or with chapati/ poori in lunch/ dinner.
