Koki is a famous and delicious flatbread from Sindhi cuisine.

This recipe is by Kanchan Chhabria.

Koki is a yummy and crunchy flatbread made with wheat flour, onion, green chillies, some spices and seeds. This is very easy to prepare and gets ready in just 10 minutes. You can serve it as a tiffin snack or breakfast or tea time snack or lunch or dinner. It tastes delicious with curd and papad. So, try this yummy dish at home. All family members will enjoy this very much.

Ingredients

  • Onion - 1 finely chopped
  • Green chilli - 2 finely chopped oas per taster
  • Coriander leaves/ dhaniya patti - hand full finely chopped
  • Turmeric powder - a pinch
  • Red chilli powder - 1 Teaspoon or as per taste
  • Sesame Seeds - 1 Teaspoon
  • Ghee/clarified butter - 2 to 3 Teaspoon
  • Jeera/ cumin seeds - 1/2 Teaspoon
  • Whole wheat flour - 1 Cup
  • Salt - to taste
  • Water - as required
  • Ghee/clarified butter - as required for roasting

Instructions

  1. Take a bowl, add finely chopped onion, green chilli, coriander leaves, wheat flour, jeera, red chilli powder, turmeric, salt, ghee, sesame seeds.
  2. Mix all the ingredients well. Add water as required to make a stiff dough.
  3. Take a ball sized portion of the dough, dust with flour. Roll it thick with the help of rolling pin.
  4. Meanwhile, heat a tawa. Lightly cut the koki with a knife. Make multiple cuts.
  5. Grease the tawa with ghee. Place koki on it. Roast it on a medium flame by applying ghee both the sides.
  6. Cook till it turns crispy from both the sides. Transfer to the plate.
  7. Yummy 'Koki' is ready to be served with papad and curd.
