Today I had some Gujarati friends over at my place. So decided to make the famous Gujarati snack – Khandvi for them. It came out very tasty and they loved it. Here is the recipe.

Ingredients

  • Gram flour/ Besan : 2 cups
  • Sour curd : 2 cups
  • Water : 3 cups
  • Turmeric (haldi) powder : 1 teaspoon
  • Salt as per taste
  • Green chilies ginger paste : 2 teaspoon
  • FOR TEMPERING
  • Oil : 2 tablespoon
  • Mustard seeds : 1 teaspoon
  • Sesame seeds : 1 teaspoon
  • Hing (Asafoetida) : A pinch
  • Green chillies chopped : 1/2 teaspoon
  • FOR GARNISHING :
  • Red chilli powder : As per choice
  • Coriander leaves chopped : As per choice
  • Grated coconut : As per choice

Instructions

  1. Add besan, curd, turmeric, water, ginger chilly paste, salt in a bowl and mix it well. Make sure no lumps are formed.
  2. Pour this mixture into a pan and cook it on medium to high flame and keep stirring continuously. No lumps must be there. It will take 10-15 minutes to cook.
  3. When the mixture leaves the sides and becomes thick it is done. For testing you can put a little mixture on a greased plate and fold and roll it. If it folds easily, then it is done.
  4. When mixture is still hot, pour it on a greased plate or greased platform as a thin layer.
  5. Let it cool down and then cut it into long strips and fold it very gently.
  6. Now make tempering : Heat oil in a pan. Add mustard seeds, hing and sesame seeds.
  7. Once it crackles add green chilly and pour it on khandvi.
  8. Garnish it with chopped coriander, coconut and red chilly powder.
  9. Enjoy delicious khandvi.
