Kadhi Kachori

Kadhi Kachori is a popular street food and breakfast in Rajasthan.Kadhi is a bit different from what we usually cook  and the combination of kadhi and kachori  make a filling breakfast

The filling can vary from simple dal to rich mawa. It’s up to us what we want, veggies can also be stuffed and instead of frying we can also bake them. This is a basic recipe which I learnt from one of my neighbour and also a local kachori shop. So here is my tasty and healthy version.

Ingredients

  • For Kachori: Maida ( All purpose Flour) - 1 cup oil, 1/4 cup salt as per taste, a pinch of baking soda, a pinch of ajwain water
  • For Kadhi: Curd - 1cup, add 3cups of water and blend it to attain 4 cups of thin lassi
  • Besan - 12 tablespoon
  • Salt as per taste
  • Turmeric - 1/2 tablespoon
  • Red chili powder as per taste
  • For Tempering : Oil - 2 tablespoon , Whole red chili , Few curry leaves , Cumin Seeds, Mustard Seeds, Fennel Seeds, Methi and onion seeds (paanch phoran) - all together 1 tablespoon , Garlic - 4 minced pieces , Onion - 1 chopped
  • For Stuffing Kachori : Soaked Moong Dal (two to three hours), Oil - 1/2 cup, Bay leaf , Whole red chili, Salt, Mustard/Cumin Seeds, Few peppercorns , badi elaichi (1 piece) crushed, a few cloves, Red chili powder & Turmeric powder - 1/2 tablespoon
  • Amchur powder as per taste
  • Oil to deep fry kachoris

Instructions

  1. Knead the dough using oil, salt, baking soda and water. Keep it aside.
  2. For STUFFING: Heat oil, add cumin seeds, mustard seeds, whole red chilli, cloves, bay leaf and badi elaichi.
  3. Add dal, turmeric powder, salt, chilli powder and mix well.
  4. Keep cooking and mixing till rawness of dal disappears.
  5. Add amchur powder in the mix properly and keep aside to cool. Remove the bay leaf from the stuffing.
  6. For KADHI : Mix besan, salt, chilli powder, turmeric powder into thin lassi we made and blend well.
  7. Heat oil, add the paanch phoran, asafoetida, curry leaves, garlic and onion.
  8. Add the kadhi mixture and cook for 10 - 20 minutes.
  9. For making KACHORI: Divide the dough into equal portions, shape into thick pooris using hands, place spoonful of stuffing, seal it properly and keep aside.
  10. Heat oil in a kadhai. Let it heat, then lower the heat. Add the kachoris and cook on medium heat turning kachori properly and gently till they are golden brown in colour.
  11. Serve hot kachori with kadhi or any chutney!
