Jhatpat Canopy (Katori) Chaat

Ingredients

Store bought canopies - 1 pack (25 pc)
To make stuffing for chaat:
Boiled potatoes (diced) - 2 medium
Brown chana(boiled) - 1/2 cup
Dry green matar(boiled) - 1/2 cup
Onions(finely chopped) - 1-2
Tomatoes(finely chopped) - 1-2
Red apple(finely chopped) - 1
Carrot(grated) - 1 -2 tablespoons
Cabbage(grated) - 1 tablespoon
Green chillies and coriander leaves(chopped)
Salt to taste
Chaat masala - 1 teaspoon
Roasted jeera powder - 1/2 teaspoon
Red chilli powder - 1/2 teaspoon
Green chutney - 2 tablespoons
Red tamarind chutney - 2 tablespoons (or use tomato ketchup)
Sev/bhujiya & boondi - 1/2 bowl
Curd - nicely churned (optional)

Instructions

To make Chaat -
Mix boiled diced potatoes, brown chana, dry green matar, chopped apple, onions, tomatoes, grated carrot, cabbage in a big mixing bowl.
Add chopped green chillies, salt, roasted jeera powder, chat masala and a pinch of red chilli powder to it and mix well.
Add green chutney and red tamarind chutney or tomato ketchup (as per availability) to the above mix.
Take canopies and stuff them with the filling made above.
Add green chutney and curd on top of it.
Garnish with fresh sev/bhujiya, khara boondi, additional onions and coriander leaves.
Enjoy the yummy jhatpat canopy(katori) chaat with a cup of tea/coffee or any drink.
