BEETROOT COCONUT DELIGHT

Today I made something unique and super healthy full of iron BEETROOT COCONUT DELIGHT….

Yesterday I got beetroot from Vegetable market but my son said mom I am bored with beetroot salad so prepare something interesting and guess what I made this delicious sweet dish with a super healthy ingredient…………..

Ingredients

  • Grated beetroot: 1 cup
  • Coconut Powder: 1 cup
  • Ghee: 2 tablespoons
  • Sugar: 1 cup or as per your taste
  • Water: 1 cup
  • Elaichi Powder: 1/2 teaspoon
  • Dry nuts: Kaju, almomd, peanuts and kishmish: 1 cup
  • Whole cashewnuts (kaju) for garnishing

Instructions

  1. Put pan on the gas then add ghee and grated beetroot and roast it for 10-15 minutes on medium flame.
  2. Put another pan on the gas and add coconut powder then roast it for 5-7 minutes then take it out.
  3. Put pan on the gas and add dry nuts then roast it for 5-7 minutes the take it out. Grind it in grinder to make it powder.
  4. Take one bowl water in a pan and heat it. When water starts boiling, put sugar in it and mix it continuously till it becomes ek taar (onewire) chaashni.
  5. How do you see ektaar chashni- take the chashni between thumb and first finger and enlarge it. If it becomes like one wire, then it is called ektaar chashni.
  6. Mix beetroot, coconut powder and drynut powder in sugar syrup and mix it properly on medium flame for 2-3 minutes then put off gas.
  7. Grease the tray with ghee then spread beetroot mixture evenly then kept in fridge for 2 hours to set it.
  8. Take it out from fridge and cut into pieces and garnish with cashew nuts.
