Haldi (Raw Turmeric) ki Sabzi

Rich and good for immunity, Kacchi Haldi or Raw Turmeric ki sabzi is very famous in Rajasthan during winters.

Turmeric in Ayurveda is considered a very powerful medicine for curing everything from cold, cough to increasing our immunity as well as in many other diseases such has toothaches, jaundice, skin problems etc. It has strong anti inflammatory properties and probably the reason why it was included in our daily diet.

Here I am telling a delicious yet instant recipe for making kacchi haldi ki sabzi which tastes amazing with garma garam fulka or chapati! This sabzi can be stored for 2-3 days in fridge and just needs to be warmed up in a pan before serving.

Ingredients

  • Grated Raw Tumeric (Kachi Haldi)- 1 bowl
  • Green Peas – ½ bowl
  • Chopped onion-1 bowl
  • Chopped tomato-1/2bowl
  • Crush Garilc cloves-8-10 pieces
  • Fresh mashed curd - 1/2 bowl
  • Pure Ghee- 3-4 tablespoon
  • Spices- Salt-1 tablespoon, Red chili powder-1 tablespoon, Coriander Powder-2 tablespoon
  • Chopped Coriander Leaves - 2 tablespoon
  • Cumin Seeds - 1 tablespoon

Instructions

  1. Put pan on the gas and add ghee then heat on medium flame. Add cumin seeds and sauté it till they sprinkle.
  2. Add chopped onion and sauté it for 2-3 minutes, then add garlic and green peas. Sauté it for 5-7 minutes.
  3. Add kachi grated haladi and green chili. Cook 10-15 minutes.
  4. Add chopped tomato and mix it properly then add remaining spices. Mix it and sauté for 5-7 minutes. Now add curd and mix it properly. Cook it till ghee separates from sides and put off gas.
  5. Garnish with coriander leaves and Kacchi Haldi ki Sabzi is ready to be served with hot chapatis.
