Grated Cabbage with Smoky Flavour

Ingredients

Cabbage - around 300 gms
Tomato - 1 big sized chopped
Finely chopped green chilies - 1
Oil - 1 1/2 teaspoon
Turmeric powder/Haldi - 1/2 teaspoon
Red chilli powder/Mirchi - 1 teaspoon
Mustard powder(Peesi huyi Rai) - 1/2 teaspoon
Cumin seeds/Jeera - 1/2 teaspoon
Mustard/Rai -1/2 teaspoon
Asofoetida/Heeng powder - 1 + 1 pinch
Lemon - 1/2 (or 1/2 teaspoon Amchur)
Ghee - 3 drops for smoke
Coal - for smoke
Salt as per taste

Instructions

Grate Cabbage with a grater (the one with larger slits).
In a large mixing bowl, add grated cabbage, chopped green chilies and tomatoes.
Add salt, turmeric, red chili powder, mustard powder and mix well.
Add little amchur powder or half lemon juice instead of amchur and mix well.
Heat oil in a pan. Add tadka of asafoetida, cumin, mustard. Add this to the bowl of grated cabbage and other spices. Mix it well and cover it.
To add the smoky flavor, place a spoon in the mixing bowl and add a pinch of asafoetida powder to it.
Next burn the coal to flame and place it on the spoon kept in bowl. Add drops of ghee on it and cover it with a lid. Let the smoky fumes be captured in it and let it be covered for atleast 10 minutes.
After that remove the coal. Using the same spoon, mix it so that the smoky flavour gets mixed up properly.
Garnish with fresh chopped coriander leaves
