Ingredients

  • INGREDIENTS FOR GHEVAR -
  • Rice flour/ chawal ka atta - 1 bowl
  • Ghee - 1 cup
  • Ice cubes/ barf - 1 cup
  • Milk/ doodh - 1 cup
  • Sugar/ cheeni - 2 tablespoons
  • Ghee for frying - 2 bowl
  • INGREDIENTS FOR MANGO RABDI -
  • Milk/ doodh - 1/2 litre
  • Mango puree - 1 cup
  • Powdered sugar/ cheeni - 2 tablespoons
  • Chopped almonds/ baadam - 2 tablespoons

Instructions

  1. GHEVAR - Make one string consistency of sugar syrup. Heat a pan on medium flame and add sugar and water for making sugar syrup. Once the syrup is ready, put off the gas and set it aside.
  2. Meanwhile, take ghee in a bowl and add ice cubes to it. Mix it continuously. Ghee will become creamy in texture.
  3. Then take out the ice cubes from the mix and add rice flour to it. Add milk also and mix it well. Your batter will be like running consistency.
  4. Now take a long big pan and heat some ghee in it. Then from long distance put the batter in center regularly.
  5. Repeat this process for two times. If the center does not create holes then use some stick to make the hole.
  6. Then fry it till golden brown and take it out and put in sugar syrup and immediately take it out.
  7. MANGO RABRI - Boil milk on sim gas while stirring continuously.
  8. When milk is reduced, add sugar and mango puree to it. When Rabri thickens, put off the gas.
  9. SERVING - Take Ghevar and add it in mango rabri and put on a serving plate. Garnish the dish with almonds.
  10. Delicious sweet ghevar in mango rabri is ready to be served!
