Eggless Orange Cake

Ingredients

Oatmeal (plain oats ground to flour) - 2 cups
Orange pulp - 1 cup
Orange zest - 1 teaspoon
Oil or butter - 1/2 cup
Sugar - 3/4 cup
Baking powder - 1 teaspoon
Cake tin of any type - 1 number
INGREDIENTS FOR ORANGE GLAZE -
Corn starch - 2 tablespoons
Powdered sugar - 2 tablespoons
Orange juice - 1/2 cup
Some candied orange wedges for garnishing

Instructions

First of all, grease the cake tin with oil and keep aside.
Mix oil or melted butter with sugar and beat well until fluffy.
Add orange pulp and zest and mix well.
Add oatmeal with baking powder and fold gently.
Pour the batter into cake tin and bake at 180℃for 25-30 minutes in a preheated oven.
Let the cake cool completely and de-mould it.
METHOD FOR ORANGE GLAZE - Mix 2 tablespoons cornstarch with orange juice.
Heat and stir the mix until thickens. Add powdered sugar and mix.
Refrigerate for some time to cool.
Drizzle this glaze over cake and garnish it with some orange wedges.
Yummy 'Eggless Orange Cake' is ready to be served!
