Ingredients

  • Atta/ Flour - 2 cups
  • Urad dal/ Husked Black gram without skin - 1 cup
  • Hari Mirch/ Green Chili - 1
  • Chopped Adrak/ Ginger - 1 tablespoon
  • Laal Mirch powder/ Red Chili powder - 1 tablespoon
  • Paani/ Water - to knead dough
  • Aloo/ Potatoes - 5-6
  • Wadi 1
  • Chopped Pyaaz/ Onion - 1
  • Chopped Tamatar/ Tomato - 1
  • Jeera/ Cumin seeds - 1 tablespoon
  • Garam masala/ All spice mix - 1 tablespoon
  • Hing/ Asafoetida - 1 pinch
  • Tel/ Oil - for deep frying and cooking
  • Paani/ Water - for sabzi 2 cups

Instructions

  1. Soak urad dal for about 5-6 hours.
  2. Wash and soak wadi in little water.
  3. Grind soaked urad dal, ginger, green chilli, red chilli powder.
  4. In a bowl, add atta, a little oil, dal paste, and water and knead a smooth dough.
  5. Cover the dough with a muslin cloth and keep it aside for about 10-15 minutes.
  6. Wash, peel, and cut potatoes in thin strips lengthwise.
  7. In a kadai, add oil and potatoes, and fry them till they turn light brown.
  8. Take them out, and then stir fry the wadi for about 4-5 minutes.
  9. Take out the wadi.
  10. In the same kadai, add jeera.
  11. When the jeera splutters, add onion and sauté it.
  12. When onion becomes translucent, add tomato, hing, salt, red chilli powder, and garam masala powder and mix it.
  13. Cook it for other 5 minutes and, when the tomatoes become tender, add potatoes and wadi.
  14. Mix well and then add 2 cup of water.
  15. Bring it to a boil, cover it, simmer it and let it cook for another 5-10 minutes.
  16. Meanwhile, in another kadai, add oil for deep frying.
  17. Take a portion of the dough and make small balls with it.
  18. Roll each ball into small puris.
  19. Deep fry these bedmi puris, take them out and place them on a kitchen towel.
  20. Serve hot 'Bedmi Puris with Aloo Wadi ki sabzi'.
