Ingredients

  • Baby Potato - 15 pieces
  • Chopped mint leaves - 1 cup
  • Ginger chilli paste - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Spices as per taste - Black pepper powder, Red chilli flakes or powder, Ajwain
  • Vegetable oil - 2 teaspoon
  • Chopped coriander leaves and Green chilli - for garnishing
  • Sendha namak (Rock salt) - 1 teaspoon
  • Hing (Asafoetida) - A pinch

Instructions

  1. Take the baby potatoes and half boil them and peel off the skin.
  2. Brush the potatoes with oil.
  3. Preheat the oven at 180° for ten minutes and bake the baby potatoes for 15-20 minutes. Keep them aside when done.
  4. Heat oil in a pan and add ajwain, hing and then add ginger chilli paste and saute them.
  5. Add the baked potatoes, mint leaves, spices and lemon juice. Mix them properly and turn off the gas.
  6. Empty it into a bowl and garnish with chopped coriander leaves and green chillies.
  7. Enjoy crispy spicy baked potato.
