Cheesy Jacket Potatoes

Ingredients

Potatoes - 2
Grated mozrella cheese - 1/2 cup
Finely chopped onions - 1 medium sized
Fresh tomato puree - 2 tablespoons
Chopped or crushed garlic (optional) - 1 teaspoon
Salt, pepper and dried herbs or seasoning - taste wise
Basil leaves - 5-6
Oil - 2-3 teaspoons
Basil leaves, chilly flakes and dried herbs for garnishing
Water - for boiling potatoes

Instructions

First of all boil potatoes till they are 90% cooked (they should not be too soft). Let cool.
Cut the potato into half lengthwise and scoop out the center portion with a spoon.
Take a pan and add half of oil mentioned above.
Add crushed garlic and saute. Add chopped onions and stir.
Add tomato puree, scooped out potato, salt, spices and cook.
When cooled add some crushed basil leaves and half of the grated cheese.
Fill this mix into potato shells. Heat the remaining oil in a pan and put these potatoes shells. Top them with remaining grated cheese.
Cover with lid and cook for 5 minutes at slow flame so that potato skin is crisp and cheese melts
Garnish with some basil leaves, dried herb and chilly flakes.
Delicious cheesy jacket potatoes are ready to be served.
