Ingredients

Gram Flour/Besan - 1 cup
Carrot/Gajar grated - 1/2 cup
Spinach/Palak : Finely chopped - 1/2 cup
Curd - 2/3 cup
Salt as per taste for both dough and masala
Red chili powder - 1/4 teaspoon for dough + 1 tspn for masala
Turmeric/Haldi - pinch for dough + 1/2 teaspoon
Coriander/dhania powder - 1 teaspoon
Cumin/Jeera - pinch for dough + 1/2 teaspoon for tadka
Asofoetids/Heeng - a pinch for dough + pinch for tadka
Green chilies and Coriander/Dhania leaves finely chopped for garnishing
Oil/ghee - 2 teaspoon for moyan + 1 tablespoon for tadka

Instructions

Wash and peel carrot. Grate Carrot. Wash and finely chop spinach.
Add salt, haldi/turmeric powder, red chili powder, asafoetida, cumin/jeera and oil to the besan/Gram flour in a mixing bowl.
Add grated carrot and chopped spinach to it. Now mix all nicely by rubbing between hands.
Add little water (if required) to make smooth soft dough. Roll out balls of besan dough into cylinders. Boil water in a pan/patila and add the gatta rolls to it.
Boil and Cook on medium flame till the gatta rolls are cooked. Test by piercing a knife or skewer. It should come out cleanly.
When done, Remove the rolls from water and cut into pieces. Dont throw the stock. Use it for gravy later.
Take big cup of curd and add salt, haldi, dhania and mirch powder. Mix well.
Heat ghee/oil in a kadai. Add heeng and cumin/jeera for tadka.
Lower flame and then add the curd mixed with masala to the tadka. Stir well.
When the masala is cooked (oil being separated from sides), add gatta pieces to the gravy.
Adjust the gravy by adding the stock of gatta. Add a pinch of garam masala to this.
Simmer and cook the gattas. When the gravy leaves the oil from sides and a oily layer is formed on the top, it indicates the sabzi is well cooked..
Garnish with chopped green chilies and fresh chopped coriander leaves.
Serve Carrot Spinach ke Gatte ki Sabzi hot!
