Ingredients

  • Carrot - 1 (peeled and finely chopped lengthwise )
  • Ginger - 4-5 thin strips (just for taste)
  • Masala - mustard seeds, fennel seeds, ajwain, cumin seeds and coriander seeds - coarsely ground
  • Salt - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chilli powder- 1 teaspoon
  • Oil - 3 teaspoons
  • Lemon - 1/2 small

Instructions

  1. Heat one teaspoon oil in a pan. Add ginger and carrots to it. Sauté for 2 minutes.
  2. Take this out of the pan.
  3. Heat 2 teaspoons oil in the same pan.
  4. Add the ground masala in the pan. Add chilli powder, turmeric powder and salt in it. Sauté for 2 minutes.
  5. Pour this masala on the carrots and mix thoroughly.
  6. Squeeze the lemon over this and mix.
  7. Carrot pickle is ready to be served or can be kept aside for some time for flavour enhancement.
